Baguette production process:
1. Mixing Dough: add certain amount flour to the spiral mixer, timing is about 20-30 minutes.
2. Dough dividing: Put the dough into the dividing machine (automatic).
3. Shaping: Put The dough into the baguette moulder (automatic).
4. Put the dough on baguette pan.
5.Proofing: Put the baguette to the fermenting room ( proofer ),
6. After proofing, cut on the dough surface with a cutter, then put it in the oven for baking ( steam is needed)
