Bagels (makes 12)

Ingredients 500g strong white bread flour 10g instant yeast 10g malt extract 10g salt 265ml lukewarm water 30g melted butter 1 medium egg Egg white for glazing the bagels before baking 15g Malt Extract for the saucepan of boiling water Sesame and Poppy Seeds Method Melt the butter in the microwave on low and cool slightly Beat the egg into the butter In the bowl of a stand mixer add the bread flour, the yeast, sugar, salt and malt extract (keep the yeast separate from the salt) and the water and the egg mix Mix to combine (get in there and use your hands too!) Using a dough hook knead for around 6 minutes and then a minute or two by hand until it is soft and elastic rather than rough looking Leave in the bowl, covered in a warm kitchen for one hour 15 mins until doubled in size. Divide into 12 pieces (around 70g each) Roll each piece into a ball, flatten and make a hole in the middles. Stretch the hole and make even Prove for another 20 mins on a lined tray covered with a damp tea towel Heat the oven to 200 fan Fill up a large saucepan with water and bring to the boil. Add 15g of malt extract and stir it in the water Carefully put each bagel into the water and leave 1 minute and then flip them over and leave for another minute Place each wet bagel onto the baking tray, prettier side up Brush with egg white and sprinkle with seeds of your choice Bake for 20 minutes until golden brown then cool on a wire rack These should be eaten fresh or frozen in an airtight ziplock bag
